Chocolate Chip Cookies...with Pudding!

Makes 24 - 30 cookies

Total Time 30 minutes

 

Ingredients

1 cup butter

1/4 cup white sugar

3/4 cup brown sugar

1 small box instant vanilla pudding (do not add milk)

1 tsp. vanilla

2 eggs

21/4 cups flour

1 tsp. baking soda

1 cup chopped walnuts

12 oz. Hershey's Semi Sweet Chocolate Chips

pinch of salt

 

Directions

 Preheat oven to 350 degrees F.

Cream butter, white sugar, and brown sugar in a large bowl.

Mix remaining ingredients into the bowl with the butter and sugars.

Bake on an ungreased cookie sheet for 10 to 12 minutes.

Tips and Tricks...substitute 1/2 cup of margarine (I Can't Believe It's Not Butter) for 1/2 cup of the butter. Use a baking stone instead of the cookie sheet. You may need to add a few minutes to your cooking time.

So Easy Lemon Bars

Makes 36 servings

Total Time 1 hour 35 minutes Prep Time 15 minutes

Ingredients

1 roll Pillsbury refrigerated sugar cookies

4 eggs, slightly beaten

11/2 cups granualted sugar

2 Tbsp. all-purpose flour

2 Tbsp. butter or margarine, softened

2 Tbsp. grated lemon peel (2 medium)

1/3 cup fresh lemon juice (2 medium)

1 to 2 Tbsp. powdered sugar

 

Directions

Preheat oven to 350 degrees F. In ungreased 13x9-inch pan, break up cookie dough. With floured fingers, press dough evenly in bottom of pan to form crust. Bake 15 to 20 minutes or until light golden brown.

Beat eggs in a large bowl with wire whisk or fork until well blended. Beat in granualted sugar, flour, and butter until well blended. Stir in lemon peel and lemon juice. Pour mixture over warm crust.

Bake 20 to 30 minutes longer or until edges are light golden brown. Cook completely, about 3o minutes. Sprinkle with powdered sugar. Dip knife in hot water. Cut into 6 rows by 6 rows.

Fun Chocolate Fondue for Hungry Fans

Makes 10 ounces

Total Time 45 minutes

 

Ingredients

8 oz. milk chocolate in chips

2 Tbsp. heavy cream

2 Tbsp. chunky peanut butter

Directions

Combine chocolate and cream in the top bowl of your fondue set.  [ed.  - We like to use the ceramic insert of the Trudeau 3-in-1 Alto Electric Fondue Set, inserted inside and on top of water in the stainless steel fondue pot, which works best for this chocolate fondue, but you can use any double-pot fondue set, a simple double broiler, a traditional fondue pot such as an Emile Henry, or even a stainless mixing bowl over a pot on the stove will work.  If using a double broiler insert, such as the Trudeau fondue pot comes equipped with, insert the top bowl over simmering water, which goes in the lower pot.]​

Heat the chocolate in the pot over the boiling water, until the chocolate is melting, stirring constantly [ed. - do this part on the stove over medium high heat, the Trudeau 3-in-1 Alto Electric Fondue Set works on any kind of burner, but read your instructions if using a ceramic or other pot].  Add peanut butter and stir until blended.  Keep fondue warm over low heat for serving [ed. - do this part on the electric fondue plate].​

 

Enjoy with fresh strawberries, bananas, cheesecake, Rice Krispies Treats®, marshmallows, pound cake and brownies for dipping.

Million Dollar Pound Cake

Makes 1 cake

Total Time 1 hour 30 minutes

Ingredients

3 sticks unsalted butter, softened

11/2 cups sugar

6 large eggs

2 cups all-purpose flour

1 tsp. vanilla extract

1 tsp. salt

Directions

Preheat oven to 300 degrees F. Preheat to 350ºF. Butter a 9 × 5-inch loaf pan. Whisk together the flour and salt. In the bowl of an electric mixer fitted the paddle, beat the butter, sugar, and vanilla until light and fluffy. Add the eggs one at a time, beating until combined. Add the flour mixture with the mixer on low, and beat until just combined.

    Pour the batter into the pan, smooth with an offset spatula, and bake for about 55 minutes, until golden and a tester comes out clean. Cool on a wire rack for 15 minutes, and then turn out the cake to cool completely. Dust with confectioners’ sugar before serving, if desired.

Homemade Apple Pie

Makes 8 servings

Total Time 2 hours

Ingredients

​8 cups thinly sliced apples

2 pastry pie crusts

3/4 cup granulated sugar

2/3 tsp. cinnamon

2 Tbsp. all-purpose flour

1 tsp. vinegar

1 egg beaten

Directions

    Preheat oven to 425°F. Place 1 pie crust in on the bottom of an ungreased 9-inch glass pie pan. Press firmly to fit the pie crust against the sides of the pie pan.

    In large bowl, combine all filling ingredients and spoon onto the pie crust. Cut second crust into 1 inch strips to lay across the apple filling, alternating directions to form a lattice top.  Brush tops of strips of uncooked pie crust with beaten eggs and sprinkle lightly with sugar.

    Bake 45 minutes or until crust is golden brown. Cover edge of crust with strips of aluminum foil after first 15 minutes of baking to prevent burning. Cool for 1 hours before serving.

Homemade Cherry Pie

Makes 8 servings

Total Time 2 hours

Ingredients

​1 can cherry pie filling

2 pastry pie crusts

2 cups cranberries

3/4 cup granulated sugar

1 Tbsp. cherry liqueur

2 Tbsp. cornstarch

1 egg beaten

Directions

    Preheat oven to 425°F. Place 1 pie crust in on the bottom of an ungreased 9-inch glass pie pan. Press firmly to fit the pie crust against the sides of the pie pan.

    In large bowl, combine pie filling, cranberries, sugar, liqueur, and cornstarch, and spoon onto the pie crust. Cut second crust into 1 inch strips to lay across the apple filling, alternating directions to form a lattice top. Brush tops of strips of uncooked pie crust with beaten eggs and sprinkle lightly with sugar.

    Bake 40 minutes or until crust is golden brown. Cover edge of crust with strips of aluminum foil after first 15 minutes of baking to prevent burning. Cool for 1 hours before serving.

Espresso Kahlua Brownies
 

Makes 12 servings

Total Time 1 hour

Ingredients

1/2 cup unsalted butter (cut into pieces)

3 oz. unsweetened chololate (chopped)

2 eggs

11/4 cups sugar

1 tsp. vanilla extract

2 Tbsp. espresso powder (instant)

3 Tbsp. Kahlua (liqueur)

3/4 cup all-purpose flour

1/2 tsp. baking powder

1/4 tsp. salt

25 espresso coffee beans

Directions

Preheat oven to 350°F. and butter and flour a 9-inch square baking pan, knocking out excess flour. In a small heavy saucepan melt butter and chocolate over low heat, stirring, until smooth. Cool chocolate mixture to lukewarm. In a large bowl with an electric mixer beat together eggs, sugar, vanilla, espresso powder, and Kahlúa until mixture is thickened and pale. Beat in chocolate mixture. Into a bowl sift together flour, baking powder, and salt and beat into batter just until blended well.  

Spread batter evenly in pan and arrange coffee beans in 5 rows of 5 beans each. Bake brownies in middle of oven 30 to 35 minutes, or until a tester comes out with crumbs adhering to it. Cool brownies completely in pan on a rack

before cutting into 25 squares. Brownies keep, layered between sheets of wax paper in an airtight container at cool room temperature, 5 days.

Grilled Fruit with Orange Yogurt Sauce​

 

Makes 8 servings

Total Time 1 hour

Ingredients

8 skewers soaked in water for 30 minutes

10 - 12 cups of your favorite bite-sized chopped fruits

olive oil

1 16 oz. vanilla yogurt

1 orange juiced and zested

3/4 cup of brown sugar

1/4 cup water

Directions

Skewer bite sized fruit pieces on skewers. Brush fruit pieces with olive oil to prevent sticking to the grill and to add another flavor profile. Grill!

In a small pan, combine orange juice, brown sugar, and water, and bring to a boil. Set aside and let cool.

Combine cooled brown sugar syrup with yogurt and serve with grilled fruit.

Choose among watermelon, peaches, strawberries, bananas, plums, apricot, pineapples, and so many more fruits!

Watermelons retain water when grilled, so let cool before you bite into a freshly grilled slice of watermelon.

Homemade Ice Cream​

 

Ingredients

2 cans condensed milk

1/2 cup sugar

2 pints half and half

1 pint whipping cream

1 Tbsp. vanilla extract

Fill to line on freezer with cold whole milk

Directions - Follow the instructions for the freezer you are using.
