Slow Cooker Gnocchi and Chicken Soup
Makes 6 servings
Total Time 8 hours 45 minutes
Ingredients
11/4 pound boneless chicken thighs cut into 3/4 inch pieces
1 cup julienne carrots
1/2 cup chopped celery
1/2 cup chopped onion
1 tsp. dried thyme leaves
1 carton (32 oz.) chicken broth (4 cups)
1 can (103/4 oz. condensed cream of mushroom soup
1 package (16 oz.) gnocchi (not frozen)
1 package (9oz.) sweet peas
Directions
In 10-inch nonstick skillet, cook chicken 5 to 7 minutes, stirring frequently, until browned and no longer pink in the center.
Spray 3- to 4-quart slow cooker with cooking spray. In cooker, mix chicken and remaining ingredients except gnocchi and peas. Cover; cook on Low heat setting 8 to 10 hours.
Increase heat setting to High. Stir in gnocchi and peas. Cover; cook about 30 minutes longer or until gnocchi and peas are tender.

Wisconsin Beer Cheese Soup
Makes 8 servings
Total Time 1 hour 15 minutes
Ingredients
1 cup diced carrots
1 cup diced onions
1 cup diced celery
2 cloves garlic, minced
2 Tbsp. vegetable oil
1 tsp. hot pepper sauce
1/8 tsp. cayenne pepper
1/2 tsp. salt
1/4 tsp. black pepper
3 cups chicken broth
2 cups beer
2 cups milk
2 cups half and half
1/3 cup butter
1/3 cup flour
3 cups shredded aged Cheddar cheese
3 cups shredded mild Cheddar cheese
1 Tbsp. Dijon mustard
1 tsp. Worcestershire sauce
Directions
In a large saucepan, add vegetable oil and stir together carrots, celery, onions, and garlic. After 2 minutes, add chicken broth and beer to vegetables, and cook vegetables until they are tender (10 to 15 minutes). Stir in cayenne pepper, hot pepper sauce, salt, and pepper. Remove from heat. If desired, smooth mixture with an immersion blender to remove texture of the vegetables.
Melt butter in a large pot over medium-high heat. Stir in flour and whisk the mixture until smooth. Continue to cook, stirring, until the flour is light brown (about 3 to 5 minutes). Stir in milk and half and half gradually, stirring constantly to prevent scorching until the sauce thickens. Remove from heat and gradually stir in cheese. Combine beer mixture and cheese mixture. Mix well. Add Dijon mustard and Worcestershire sauce.

Cuban Sandwiches
Makes 8 sandwiches
Total Time 15 minutes
Ingredients
8 Cuban bread rolls (you may substitute french bread or hoagie rolls)
1 cup mayonnaise
1 cup yellow mustard
2 pounds cooked ham - thinly sliced
2 pounds cooked pork - thinly sliced
2 pounds thinly sliced Swiss cheese
2 cups dill pickle slices
1/2 cup olive oil
Directions
Cut the bread rolls in half. Layer the mustard and mayonnaise liberally onto the cut sides of the bread.
Place an equal amount of ham, pork, and Swiss cheese with the cheese on top. Sprinkle with pickles, and put the top of the roll onto the sandwich. Brush the top of each sandwich with olive oil.
Press each side of the sandwiches onto the hot surface of an indoor or outdoor grill until the bread is crisp and the cheese inside is melted.

Kentucky Hot Brown Sandwich
2/3 cup butter
6 tablespoons all-purpose flour
3 cups milk
1 cup grated parmesan cheese
1 egg beaten
1 sliced tomato
1 pound sliced cooked turkey
8 pieces of toast
12 slices of cooked bacon
1 cup sauteed mushrooms
Salt and pepper to taste
Melt putter in a pot and add flour until the butter is absorbed and the roux is lightly browned. Add milk and half of the parmesan cheese. Add a beaten egg to thicken the sauce, but do not boil. Add salt and pepper to taste
For each Hot Brown sandwich, place 2 pieces of toast on a broiler-friendly dish and cover with sauteed mushrooms, thinly sliced tomatoes, and turkey. Cover liberally with sauce and top with the grated parmesan. Broil until sauce is lightly browned. Serve with bacon on top.
