Kalbi - Korean BBQ - Short Ribs with Kick!

 

Prep Time 4:30 (4 hours for marinading beef)

Serves 6

 

Ingredients

6 pounds of Korean style short ribs

1 cup brown sugar

1 cup soy sauce

1 onion - finely grated

1 jalepeno minced

4 tsp. sesame oil

1 cup soy sauce

1/4 cup mirin

4 Tbsp. garlic minced

1/4 tsp. black pepper ground

1 Asian pear peeled and grated

1/2 cup water

 

Directions

In a bowl whisk together all ingredients (don't try to whick the ribs!). Place all ingredients into a large freezer bag.  Turn bag several times to coat short ribs evenly.  Grill over medium high heat for 3 to 4 minutes per side or until done.

Little League World Series Mania!  Saturday August 23...
 
We share in the mania of the annual battle of the young pinstripers.  On Saturday, South Korea battles the winner of the Japan/Mexico elimination game for the international Little League title.  We celebrate Korean cooking with a little Kimchee and Korean BBQ.  잘먹겠습니다.

Korean Kimchee - Cabbage with Kick!

Prep time - 1 hour to prep and 4 days to wait!

 

Ingredients

1 (2-pound) napa cabbage

1/2 cup kosher salt

3 quarts cold water, plus more as needed

12 ounces carrots and daikon radish, cut into 2-inch matchsticks

6 medium scallions, cut into 1-inch pieces 

1/3 cup Korean red pepper powder

1/3 cup fish sauce

1/3 cup peeled and minced fresh ginger 

8 medium cloves garlic minced

2  teaspoons granulated sugar

 

Directions

 

Chop napa cabbage into 2 inch pieced and toss in large bowl with salt.  Add the cold water and mix evenly.  Set aside for 12 hours or overnight.

 

Mix other ingredients together and combine with the cabbage. Set aside from 2 to 4 days.
